Edinburgh-based Apex Hotels, which has upmarket rooms in London, Glasgow and Dundee, as well as its home city,  will open a new four-star hotel in Bath this summer. Its profits more than doubled to £10.3m in 2015-16 when it also showed £188.9m assets. Springford, 72, who owns the operation run by his son Ian, 54, has teamed up with Queen Margaret University to fund a scholarship programme for students developing skills for the hospitality industry. He recently announced an international design competition to transform Edinburgh's Princes Street Gardens into a cultural and sculpture park.
